I only had a small head of cauliflower so I used some broccoli, too. I am considering adding some rinsed pinto beans for more protein. Or maybe some plant based 'crumbles.'
Fry med onion in 1 Tbls olive oil 3 min. Add 1 carton chicken broth 900 mls 1/2 tsp salt & 1/4 tsp pepper 1/8 tsp nutmeg no chives & cauliflower and cook for 15-20 min.
Puree in batches. Makes 6 serv CB
