Introduction

Number of Servings: 6

Ingredients

    Cauliflower, raw, 1 head, large broken into medium pieces.
    Onions chopped, raw, 1 medium (2-1/2" dia)
    Chicken stock, home-prepared, 4 cup
    Bacon, 2 medium slices chopped
    Milk, canned, evaporated, nonfat, .50 cup
    Parsley, 5 sprigs chopped

Tips

I top my soup with chives, cracked pepper and Parmesan or blue cheese.


Directions

Cook bacon in a soup pot over medium heat.
Add onions when bacon is cooked through. Saute for 5 minutes. Add Chicken Stock, Parsley and Cauliflower and simmer uncovered for 30 minutes.

Use an immersion blender to puree the soup.

Add Milk and soup is ready to serve.

Serving Size: makes 6 1-cup servings.

    I used vegetable stock instead of chicken. I left out the bacon and diced up a couple of ribs of celery. It was delicious! - 4/28/12

    This can easily become low carb, by using cream instead of the milk, and spring (green) onions instead of regular ones.
    And adding a dash of nutmeg brings out the taste as well! YUMMM

    I don't eat bacon, as I am a Muslim. I made the same recipe with lamb mince and it came out tasting great! - 1/26/12

    I used green onions instead of regular onions, almond milk instead of dairy milk and omitted the bacon. For diabetic reasons I added cinnamon. Mmmmm.... good! Thanks for this recipe, I will use it often. - 4/20/12

    Does the nutritional info take into acount th fact that you are not draining the bacon grease out? I wonder how much that affects things since 2 slices of bacon in the tracker assumes just the crispy part... - 1/28/13
