Preheat oven to 400 degreesOne hour before you begin the recipe, put cup of milk over the cup of oats , and a a TBSP of boiing water over the raisins and let both sit for 1 HOURin Large bowl put the flour, flaxseed meal, baking soda, baking powder and salt....mix very well with a whisk and set asidePeel 4 small apples and dice into small pieces, add some of the cinnamon and brown sugar to the apples, bake in microwave for 6 minutes take out and smash apples with a fine fork,e set asideIn another bowl add aplesauce, egg,brown sugar, and cocunut oil and mix well....Set aside.Once the raisins and oatmeal have soaked for an hour, begin making the muffin mixAdd add apple mix, raisins, and oatmeal into the applesauce mixture, mix very well.gingerly add the flour mixture only until all is wetPut in 16 oiled muffin pans....I use canola oil sprayBake in oven for 25-30 minutes, test with a tooth pick, take out of oven and take muffins out of the pan while still warm.ENJOY
