Tomato and corn soup

1kg ripe tomatoes1 400g can of corn kernels1 medium onion3 cloves of garlic1 tbsp olive oilsweet thai chili sauce (or chopped fresh chili)Salt and pepper to tastefresh spinach chopped (optional)light natural yogurt (optional)chopped green onions (optional)grated cheese (optional)
Chop and deseed tomatoes - set aside.
Chop onions and cook gently in olive oil until soft.
Add crushed garlic cloves and cook for a minute with the onions.
Add chopped tomatoes and simmer for around 15 minutes stirring occasionally.
Add thai chili sauce and season with salt and pepper.
Simmer for a short time for a fresher tasting soup - keep simmering longer for a richer taste.
Serving Size: makes 2 large servings
