Turkey Curry

1/4 cup butter1/4 cup chopped onion1/4 cup chopped celery1/4 cup flour2 Tbsp curry powder1 cup boiling water1 cup milk (skim)1 tsp lemon juice24 oz shredded turkey meat (precooked)4 cups hot cooked rice (brown)1 chicken bouillon cube
Melt butter in sauce pan and saute onion and celery until tender. Blend in flour and curry powder. Dissolve bouillon cube in water. Add broth and milk to sauce pan. Cook, stirring constantly, until it thickens. Add turkey and lemon juice. Heat through. Serve over rice.
Serves 6.
Try also with scallops, chicken, and shrimp.
