Spicy Black Bean "Burgers"

Ingredients
1 16 oz can red kidney beans1 16 oz can black beans3 large scallions1 medium carrot (peeled)1/2 EACH green, red, and yellow bell pepper5 cloves garlic (peeled)1/2 cup unchopped fresh cilantro leaves2 large eggs1 cup quick cooking oats1 tbsp + 1 tsp cumin1 tbsp hot sauce (optional)
Directions
Drain and pat dry both cans of beans (extra moisture will make the patties difficult to stick together).

Mash the beans with a fork (or blend in a food processor) until a thick paste forms. Turn out into a large mixing bowl and set aside.

In a food processor, finely chop the following ingredients: scallions, carrot, bell peppers, and garlic.

Blend in the cilantro and eggs, directly into the food processor, until a sticky mixture forms.

Combine bean and vegetable mixture until thoroughly incorporated. Add spices.

With lightly oiled hands, form patties from about 1/2 cup mixture each (will make 8 patties) and set on wax paper. Freeze for at least TWO HOURS before cooking.

Best cooked on a skillet on medium heat, about 8 minutes per side.

Serve immediately on a bun or in a salad.
