2Lg. Egg whites1/4C Canned Black beans, rinsed and drained1 TBSP chopped Onions2 TBSP Weight Watcher's Shredded Mexican Cheese2 TBSP Salsa
Beat the egg whites
Mix together beans, onion, cheese and salsa.
Pour egg into a sprayed, non-stick skillet. Cook over med. heat. Let egg set slightly. Tilt pan and allow uncooked portion to flow underneath to cook. Cook about 2-3 minutes then flip. Place bean mixture onto half the egg and flip the empty side over the bean mixture. Cook about 1 minute until cheese melts.
Slide onto plate and enjoy!
