Cookies and Cream Protein Poppers

- 1.5 cups cashews- 1 cup tightly packed dates, pitted and chopped- 1 teaspoon vanilla extract- Up to 1/4 cup milk (any kind; I used unsweetened almond milk)- 2 scoops Body Fortress Cookies and Cream Whey Protein Powder- 1/4 cup of your favorite dark chocolate, chopped (I used Lindt Excellence 90% Cocoa bar; you can also substitute chips)
1. Place cashews in a food processor and pulse until the nuts resemble pea-sized crumbles (about 15 seconds).
2. Add the dates, vanilla, protein powder, and milk to the processor. Pulse for 30 seconds, stopping scrape down the sides every few seconds.
3. Remove the mixture from the processor when it is moist and resembles one large ball of dough.
4. Stir in the chocolate by hand.
5. Use your hands to roll the dough into 24 balls.
