Paleo Waffles

Ingredients
3 egg yolks3 egg whites (at room temp!)1 cup almond flour1/4 cup coconut milk (or milk of choice)a couple dashes salt2 tbsp melted coconut oiloil or bacon grease for waffle iron
Directions
Preheat waffle iron.

In a medium bowl, whisk egg yolks and milk.

Add almond flour and salt. Combine until smooth.

Add melted coconut oil or butter.

Whisk egg whites in a separate bowl until they form moist, stiff peaks.

Fold the egg whites into batter, a quarter at a time.

Scoop 1/3 C. of batter into preheated and greased waffle iron. Don't mash down, just close the lid gently.

Cook until golden brown.
