Impossible Sweet Potato Pie (can use pumpkin)

1/2 C. Rice flour, brown3/4 C Granulated Sugar3/4 t Baking Powder1/8 t Salt1 T Cinnamon, ground1/2 t cloves, ground1/2 t Ginger, ground1/2 t nutmeg1/2 c Egg substitute1 c Evaporated nonfat (skim milk) 2 c Sweet potato (or pumpkin)cooked mashed without skin2 t Vanilla flavoring2 1/2 T Butter, salted
Mix dry ingredients. Mash sweet potatoes with butter, milk, vanilla; add egg beaters when cool. Add sweet potato mixture to dry ingredients. Pour into buttered 9 inch pie pan. Bake at 350 for 50 min.
