Whole Wheat Bread

Ingredients
3.25 cups warm water3 tbsp yeast1 heaping tbsp unpacked brown sugar1 tbsp salt8 cups flour (more if necessary)1 cup vital wheat gluten added on top of the flour
Directions
combine ingredients in the order listed. Mix and then knead by hand. Adding enough flour so that the dough is not sticky to the touch. Knead for about 20 minutes or until the dough bounces back when depressed by fingers. Let rise until double. Divide into 4 loaves and let rise again until double. Bake at 350 for about 35-40 minutes or until golden brown on top. Do not under bake as the bread will spoil faster. Remove from the oven and cool completely. Bag and refrigerate.

Serving Size: makes 4 loaves of about 12 slices per loaf.
