Chinese Vegetable Noodles

Ingredients
2 teaspoons oil1 med. onion, chopped1 tp bottled or fresh crushed garlic1 tp bottled or fresh minced ginger1 med. carrot, chopped1 sml. red capsicum, chopped2 med. zucchini, chopped1 cup sliced beans1 cup sliced mushrooms3/4 cup water3 tp cornflour1 tb soy sauce1 tb black bean sauce85g packet 2-min. noodles
Directions
1. Heat the oil in a wok or frying pan. Sitr-fry the onion until tender. Add the garlic, ginger and remaining vegetables and stir-fry until tender but still crisp.
2. Gradually blend the water and cornflour, then add the soy sauce and balck bean sauce.
3. Stir the sauce into the vegtables. Heat until the sauce boils and thickens.
4. Cook the noodles according to the packet, but without adding the flavour sachets.
5. Drain the noodles, then add to the vegetables and sauce. Stir through to coat with sauce before serving. Serves 6
