Grilled Chicken Skewers

Ingredients
Skewer: makes 8 servings (16 skewers….2 skewers/serving)16oz chicken breast, boneless skinless cut into 1oz cubes16 Button mushrooms2 bell peppers (one yellow, one orange, large dice)1 onion, large dice1 Zucchini, sliced into 16 pieces16 shortBalsamic Glaze: makes enough for 16 skewers (8 servings)1 cup Balsamic vinegar¼ tsp Salt ¼ tsp Pepper1 tsp crushed Garlic1 tsp crushed thyme2 Tbsp Grapeseed oil
Directions
Combine all glaze ingredients to make a marinade, reserve ¼ cup for glazing. Dice chicken and marinate in glaze for 1 hour. While marinating, cut veggies. Skewer chicken and veggies and season with salt and pepper. Grill for 2 minutes per side. Reduce the reserved marinade for glaze over high heat, and brush as skewers grill.
