Ingredients
1 Can of Black BeansSweet Corn, Fresh, 2 ears/Medium Scallions or Green Onions/1 Bunch1 Cup of Ripe Red TomatoeSliced Black Olives/1 can/2.25 ozCilantro/1 Large BunchLime/Juice of 1 LimeOlive Oil/2 TbspSalt and Pepper to Taste
Directions
Rinse Black Beans, Cook Corn on the Cob in Microwave & then cut off the cob. Chop Cilantro fine, (use food processer), Cut tomatoes, then add rest of ingredients/scallions or green onions/olive oil/juice of one lime and sliced black olives to the bowl and mix.
(sliced black olives optional)
