Greek Omlete Cups

Ingredients
14 egg whites, 2 egg yokes, 1 1/2 cups frozen spinach, 1 cup feta cheese, 12 cut cherry tomatoes
Directions
Mix egg whites and yokes, then add spinach and feta cheese and continue mixing, pour into greased cupcake pan, add one quartered cherry tomato to each cup, bake for 15-20 minutes until cooked. Serve or let cool and chill for another time. Microwave to reheat at 30-45 seconds for 1 to 2 at a time. Enjoy
