Broccoli and Mushrooms in Sour Cream

Ingredients
Broccoli, fresh, 2 cup, choppedMushrooms, fresh, 2 cup, pieces or slicesOnions, raw, 1 cup, choppedSalt, 1 tspPaprika, 1 tspPepper, black, .5 tspParsley, .25 cup Sour Cream, 1 cup Olive Oil, 2 tbsp
Directions
Melt butter, saute over medium-low heat, add chopped onion, cook till golden. Add broccoli, mushrooms and 1/2 cup water.
Cover and Simmer until mushrooms and broccoli are tender adding more water if needed.
10-15 min
Add salt, paprika, pepper, half of the parsley and sour cream.
Heat slowly til hot, NOT boiling.
Sprinkle remaining parsley before serving

    Very yummy! Great way to use up my fresh broccoli. I substituted fat-free sour cream for the regular, and 2 Tbsp extra virgin olive oil for the butter. Also added just a little bit of low-fat shredded cheddar on top. Thanks for a great side dish! - 2/9/09
