Pork and Mango Stir Fry

Pork Chop (1 boneless)Orange Juice (1 Tbsp)Orange ZestSoy Sauce (1/8 cup)Corn Starch (1 Tbsp)Ginger (1 Tbsp)Garlic (3 cloves)Mango (1 cup sliced)Snap Peas (1 cup)Romaine Lettuce (1 cup shredded) Olive Oil (1 Tbsp)
Pound pork chop 1/4 inch thin and slice into strips.
Combine orange juice, orange zest, soy sauce, corn starch, ginger, garlic in a bowl and whisk to combine. Slice mango, snap peas and romaine lettuce.
Heat olive oil in pan over medium heat, add pork strips and cook until browned, approx 3 minutes. Add snap peas and cook one more minute. Add soy sauce mixture and stir constantly 1 minute, until thickened (add water as needed). Add romaine lettuce and cook 30 seconds. Add mango and take off heat, serve immediately. Optional garnish: mint, orange zest, red pepper flakes.
