English muffin breakfast sandwich - turkey bacon, feta, spinach

1 Thomas light english muffin.2 cups egg beaters (slightly less than 1 egg eqiv.)1 tbsp frozen spinach1 tsp crumbled feta1 slice turkey bacon
Heat oven to 350 degrees. Spray a muffin tin with non stick spray.
Tear turkey bacon in half, and criss cross over the bottom of 1 muffin form. Add frozen spinach and feta, then pour egg over the top.
Bake for about 20 minutes, or until egg is cooked through.
I usually bake 8 of these at a time, then freeze the leftovers and thaw as needed.
