Lemon Honey Chicken

1/2 cup lemon juice plus zest of 1 lemon (optional)1 tps dried oregano2 tbs honey2 tbs olive oil3 cloves garlic-crushedsalt and black pepper1- 3lb package of boneless, skinless chicken breast-thawed and rinsed1-14oz can diced tomatoes -no salt added24 Greek olives cut in half1-10oz package frozen spinach -thawed and squeezed
In a gallon size zip top bag mix lemon juice, zest, oregano, honey, oil, garlic and salt and pepper-add chicken and allow to marinate at least 1 hour
Preheat oven to 350
In a 9X13 pan place chicken and marinade, add tomatoes (plus liquid) and olives distributing evenly.
Roast chicken for 30 minutes
Add spinach and finish cooking (15 minutes or until internal temp of 170)
