DTN's Faux Rice

raw cauliflower, chopped to make 2 cups1 T. water1T. Butter or olive oil1T. chopped fresh herbs (dill, basil, cilatantro) or1/2 t. herb paste
Chop cauliflower by hand or in food processor to make a crumbly texture resembling rice.
Put into a microwave safe bowl, add water butter or olive oil and herbs. Cover with plastic wrap and microwave 2 minutes. Mix and check for doneness. Continue to microwave for 30-60 second intervals until you achieve desired level of doneness from crisp to soft.
Serving Size: makes 2 - 1 cup servings
