Eggplants and Blackbeans

Ingredients
Eggplant, fresh, 1 cup, cubes Red Ripe Tomatoes, 1 medium whole (2-3/5" dia) Olive Oil, 2 tbsp Beans, black, 1 cup (rinsed)Salt, 1 dashPepper, black, 1 tsp Onions, raw, .5 cup, chopped Green Peppers (bell peppers), .5 cup, strips Garlic, 1 clove
Directions
Heat pan on Med. Put olive oil, heat, add eggplant, tomato, garlic, peppers, onions and cook for about 20 minutes or until tender. Add black beans, salt and pepper. Cook until beans are heated through.

Serve with Brown rice.
