Dream Dinners Chicken Cordon Bleu

6 4-oz. boneless, skinless chicken breast halves3 oz. ham, thinly sliced (6 slices)6 oz. swiss cheese (6 slices)1/2 c. canned cream of chicken soup (98% fat-free)1/4 c. white wine1/4 c. nonfat sour cream1 T. Dijon mustard1 c. (4 oz.) mushrooms, sliced1 t. minced garlic1/4 t. ground nutmeg1 t. kosher salt1/2 t. black pepper2 scallions, chopped
1. Preheat oven to 375 degrees F.
2. Spray 9 x 13-inch baking dish with nonstick cooking spray.
3. Place chicken breasts on a plastic cutting board. Arrange a slice of ham and swiss cheese on top of each one.
4. Roll each chicken breast tightly and secure with a toothpick. Place the rolled breasts in the prepared baking dish.
5. In a bowl, combine the soup, wine, sour cream, mustard, mushrooms, garlic, nutmeg, salt, and pepper. Mix thoroughly.
6. Pour the mixture over the chicken.
7. Sprinkle with the scallions
8. Bake, uncovered, for 45 minutes or until teh internal temperature of the chicken reaches 165 degrees F.
