Grilled garlic skirt steak

Ingredients
1 lb Skirt steak (or 2 strips)3 garlic cloves minced1/4 cup of Red Wine Vineger (white wine vineger can be substituted)2 tbsp Extra Virgin Olive Oil1 tbsp chopped parsley
Directions
Make sure you carefully watch the steak because if you cook it well done it will become tough. Skirt steak is meant to be eaten medium rare to rare.

Mix the vineger, garlic, olive oil and parsley and drizzle over steak. For better results let marinade set on steak for over and hour.

Heat grill and grill steak until done (2 to 3 minutes both sides).

I enjoy grilled red bell peppers (splash of olive oil, salt and pepper) with this dish along with baked asparagus.

    Only able to let it sit in the marinade for about 15 minutes due to time...next time gonna marinate it overnight. It was pretty good nonetheless, but will be better when the marinade really seeps in. - 2/17/09
