AVOCADO CORN SALSA

Ingredients
1 medium avocado, diced1 medium tomato, diced 1 medium-sized ear of corn OR 4 tbsp canned shoepeg corn1/2 red onion, diced2 lime wedges2 tbsp fresh cilantro
Directions
mixed all ingredients -- cut corn off cob and mix with other ingredients. serve over fish, salad, chicken, tamales, etc. If you want to add protein, add 1/2 cup of black beans or garbanzos (or your choice of protein) but be sure to add the extra values (calories, fat, protein, carbs, etc) -- salt to taste and ENJOY! YUM!
