Smothered Hash Browns

2 cups refrigerated shredded hash browns1/4 cup diced ham1/4 cup chopped onion1/4 tsp garlic powder1/4 tsp black pepper1/4 tsp saltcooking spray2 tsp olive oil, divided4 slices 2% reduced fat American cheese
Combine the first 6 in a bowl and coat heavily with the cooking spray.
Heat 1 tsp oil in a large nonstick skillet (no lying you really need a non-stick skillet) coated with cooking spray over medium-high heat. Spread mixture into 1 layer in pan, and cook 6 minutes or until bottom is golden and crispy, pressing down with a spatula. Drizzle top even with remaining 1 tsp. olive oil, and coat with cooking spray; flip potates in sections. Cook 4 more minutes or until bottom is golden; remove from heat. Top potatoes even with cheese slices; cover and let stand 1 minute or until cheese is melted. Remove hashbrowns to platter and cut into 4 wedges. Yields: 4 servings (serving size, 1 wedge)
