Ingredients
3 Small Red Potatoes, cubed1 med. green pepper, diced2 c cubed butternut squash1 Med. Vidallia Onion, chunked2 Small Zucchini, chopped2 Large Carrots, peeled and jullienned4 cloves garlic, minced4 Tbsp Shredded Parmesan cheese
Directions
Preheat oven to 400 degrees. Spray a jelly roll pan. Prepare all veggies as listed. Mix veggies together and place on pan. Bake 45 minuted or until tender. Sprinkle with the parmesan and serve!
