Individual Meatloaf

Ingredients
2 # ground beef, lean1/4 c carrot, diced1/2 c onion, diced1 clove garlic, diced1 egg1/2 c evaporated milk1.5 T French's brown mustard1/2 c shredded cheese
Directions

Preheat oven 350*.
Sweat onions, garlic, and carrots. Set aside to cool.
Mix all other ingredients well in a medium size bowl. Add vegetables and mix well.
Shape into palm-sized meatballs and place in greased muffin tin.

Bake for 20 minutes until reached 150* internal temperature.
