Chicken Broccoli Cheese Rice Casserole

2 medium-large boneless, skinless chicken breasts2 cups cooked rice (any variety)2 cups chopped fresh broccoli 3 oz. cheddar cheese or cheddar & gouda, shredded1/4 cup almond milk1/4 cup low-sodium chicken broth2 Tbsp Parmesan cheese2 Tbsp whole-wheat bread crumbssaltpepper
Add thawed chicken to a medium-sized pot. Cover with water and add just enough salt to season. Bring to boil and then reduce to medium to simmer for 10-15 minutes, until chicken is cooked through.
While the chicken is cooking, prepare rice.
Shred chicken.
In a bowl (or directly in baking dish), mix together shredded chicken, broccoli, rice, and shredded cheese. Add almond milk, broth, and pepper and combine thoroughly.
Spread in 13x9 oven-safe dish. Top with breadcrumbs and Parmesan cheese. Bake at 350F for 20 minutes or until cheese is melted and mix is heated through (top should be slightly browned).
