Canned Chicken, 1 cup home canned chickenCanola oil, 1 tbspOnions, raw, 1 small, chopped *Snow Peas, fresh, 6 oz. Celery, raw, 3 stalk, large (11"-12" long) Carrots, raw, 2 medium Chicken Broth, 1/2 cup Peppers, sweet, red, raw, sliced, 1 cupPeanuts, dry-roasted, 1/4 cup Rice, white, long-grain, regular, raw, enriched, 1 cup (prepared according to package directions) Soy Sauce, 1/4 cup Corn Starch, 2 Tbsp cupGinger, ground, 1 tsp Garlic, 1 tsp
Cook rice according to package instructions.
While rice is cooking, chop vegetables.
Heat oil in wok or large skillet.
Stir fry vegetables with garlic. Add soy sauce and broth from chicken. Make slurry of cornstarch and 1/2 cup water. Stir into vegetables. Add chicken and heat through as sauce thickens. Serve chicken and veggies over rice.
