Ingredients
12 ripe roma tomatos, 3 anaheim chilis roasted, skined and seeded1 pasilla chile roasted skinned and seeded2 jalapenos1 bunch cilantro2 med white onions3 cloves garlic1/4 cup lime juice1/4 cup white vinegar1 tsp cumin1 tsp saltmore chili powder to taste1 tsp mexican oregano
Directions
roast the anaheim chilis, skin and take out seeds put in food processor with all other ingredients thru garlic, pulse til its the right sized chunks to your liking. may do in small batches if you like as to get uniform sizes. Put in big mixing bowl add spices and liquids and stir til mixed. Thats it! you can cook it and can it if you like and obviously this is a large batch so you would need to or have it for a party!
