Southwestern Eggrolls

1 lb. grilled chicken breast, chopped2 cups cooked black beans1 large tomato, diced1 medium onion, diced1 can sweet corn, drained and rinsed3 cups spinach, diced1 jalapeno, minced1 clove garlic, minced1/3 cup shredded cheese1 tsp. salt-free seasoning1 package of egg roll wrappers
Grill chicken breast, chop, and set aside.
Mince jalapeno and garlic and add to large skillet.
Add cooked black beans and 1 can drained sweet corn to skillet.
Dice all remaining vegetables and add to skillet.
Cook all vegetables over a medium-high heat until onion is soft and translucent.
Season with 1 tsp of salt-free seasoning blend of your choice.
Add chopped grilled chicken and 1/3 cup of cheese to skillet and continue cooking until chicken is warmed and cheese is melted.
Place about 1/4 cup of filling mixture in each eggroll wrapper and roll up and seal.
Spray lightly with cooking spray and bake for 15 minutes in a 400 degree oven, turning once to brown both sides.
Serving Size: Makes 20 Eggrolls
