Coconut Amaranth Pudding

Ingredients
1 cup amaranth grain3 cups skim milk1 cup shredded unsweetened coconut1/3 cup splenda1 tsp vanilla extract.
Directions
Heat milk in a large saucepan, slowly, until scalded.

Add remaining ingredients to milk, and then pour into an oiled casserole dish.

Bake at 350 degrees for 60 minutes, until amaranth is tender.

Serve hot or cold.
