Val's Oriental Style Pork and Rice

8 ounces lean, boneless pork loin chops2 slices Canadian back bacon4 slices bacon1 onion chopped3 cups frozen oriental style vegetables3 cups cooked basmati rice (white long grain)2 cups beef broth2 tbsps hoisin sauce2 tbsps rice vinegar1 tsp Chinese 5 spice mix1 tbsp sesame oil (as flavouring, optional)2 tbsp corn starch
Cube pork loin chops and cut up back bacon and back bacon. Sear in skillet. (No oil necessary).
Add onion and fry til onions are carmelized. Add frozen oriental vegetables, broth, hoisin sauce, rice vinegar, Chinese 5 spice mix, and sesame oil.
Mix corn starch with 1/4 cup cold water and stir into the mix. Bring to a boil, til mixture is shiny and thickens. Serve over rice or mix rice in.
1 serving = about 2 cups, with rice mixed in.
Serving Size: Makes 4 servings of about 2 cups each.
