Velvety Vegetable Cheese Soup

Ingredients
1 16 oz. pkg frozen broccoli, cauliflower, and carrot mix2 14 oz cans fat-free reduced-sodium chicken broth12 oz. Velveeta, cut up
Directions
Place vegetables and broth in lg. saucepan; cover. Bring to boil on med-high heat. Reduce heat to low; simmer 10 min. or until vegetables are tender. Mash vegetables with potato masher to desired consistency. Stir in Velveeta is melted and soup is heated through, stirring frequently.
Makes 6 servings-1 cup each.
