Tuna Chickpea Salad with LIme

2 oz. Chunk White Tuna in water (well drained)1/4 c. English Cucumber (large diced)1/4 c. Red Bell Peppers (large diced)1 T. Red Onion (finely chopped)3 Asparagus Spears (fresh, sliced)1/2 c. Chickpeas (drained and rinsed)1/4 c. Roma Tomatoes (diced)1 c. Spinach (baby, fresh)1 1/2 c Romaine lettuce2 T. Lite Vinaigrette2 Lime wedges (squeezed over top of salad)
makes a large bowl. 1 serving
Put lettuce and spinach in bowl. Chop vegies and place on top. Drain and rinse chickpeas, put on top of vegies. Place tuna on top of all. Drizzle with lime and dressing.
I use a lite lime vinaigrette, if you can find it skip the lime wedges. You can substitue salmon, chicken, lean steak. Very versatile and filling. Super fast dinner as well.
