2 pkgs active dry yeast1/2 cup warm water3/4 cup warm milk1/4 cup sugar1/4 cup shortening1 egg1 tsp salt3 1/2-4 cups flour1 pound ground lean ground beef1/4 cup chopped onion2 1/2 cups shredded cheese
Cook onions and beef. Combine yeast, warm water, warm milk. Let sit 5 min. Add sugar, shortening, egg, salt, and 2 cups of the flour. Mix for 2 minutes on medium. Add the remaining flour and then let sit for 30 minutes until doubled. Divide dough into 10 balls. Roll out each one (tortilla size) and put a large spoonful of meat mixture onto each one. Add 1/4 cup cheese and fold, pinching closed. Put onto greased baking sheet and bake at 400 F for 8-12 minutes.
