Lentil Pasta

Ingredients
1/4 cup julienned carrots2 cups zucchini1 cup yellow squash1/2 onion2 cloves garlic3/4 of red pepper1/3 cup lentils1 plum tomato1 can vegetable broth (2 cups)1 cup of water16 oz cooked pasta (bow ties, penne, or rotini)
Directions
Bring broth and water to boil; add carrots, onion, and garlic and cook for 5 minutes. Add squashes, pepper, and lentils. Add spices of choice - I use basil, oregano, bay leaves, and black pepper. Cook until lentils are tender, approximately 20 minutes. Add tomatoes when lentils are almost finished.

Serve over cooked pasta. I use bow ties, penne, or rotini.
