Pj's Roasted Chicken Noodle Soup

1/4 cup coconut oil1 large onion, diced1 cup chopped celery4 chicken breasts8 cups water1 pod garlic (about 20 cloves) cut bottom off but leave skin on16 oz Barilla pasta4 cups spinach1/4 cup butter1/4 cup flour1 cup milksalt and pepper to taste
preheat oven to 400. Add coconut oil to dutch oven and place in oven while preheating. Dice veggies and add to dutch oven, along with garlic. Place raw chicken breasts on top and add salt and pepper to taste. Bake in oven approximately 30 minutes (or until done). About half way through remove garlic pod. Place pot on top of stove. Remove chicken and dice. And take garlic out of skin and mince. Meanwhile add water and bring to boil. Add pasta and spinach. While pasta and spinach are cooking, melt butter and add flour, stirring until slightly browned. Add milk and stir until creamy. Add to soup and stir. Taste for salt and pepper and serve.
