Daniel Fast- Chunky Potato Soup

Ingredients
3 large Potatos (cut into chunks)4 cups Vegetable BrothExtra Virgin Olive Oil1/2 to 1 cup Carrots1/2 cup Onion1 cup Celery2 cloves GarlicParsleyBay LeafThymeSaltPepper
Directions
Saute carrots, onion, celery & garlic in olive oil until tender. Add to pot of potatos, vegetable broth and herbs. Bring to boil and simmer ~30 min. (until potatos are cooked). Take ~2 cups of soup and put in food processor to mash then return to soup to thicken.
