Gomen Wat - Ethiopian style greens

Ingredients
1 box frozen spinach, 10oz, thawed1 med onion5 cloves of garlic, minced2 tsp ginger, grated or paste1 tsp berbere spice2 tsp ghee or coconut oil2-4 jalapeno peppers, seeded, to tastesalt and pepper to taste
Directions
Thaw spinach and drain well, squeezing out some of the water.

Peel and finely-chop onion. Mash or mince garlic if not using jarred garlic. Peel and grate ginger if not using ginger paste. Cut open jalapenos and remove seeds, then mince.

Add ghee (or coconut oil for vegetarian/vegan version) and cook onions over medium heat until lightly browned, about 10 minutes, stirring frequently.

Add spices and jalapenos and cook for a couple of more minutes while stirring to incorporate.

Add the spinach and cook until heated through thoroughly.
