Sugar Free Granola

3 cups gluten free oats1 cup chopped almonds1/4 cup flax meal2 Tbsp chia seeds1 cup shredded unsweetened coconut1/2 cup almond butter1/2 cup grapeseed oil1/4 cup xylitol2 droppers of stevia3 Tbsp vanilla extract1/2 tsp saltPinch or more of cinnamon
Preheat oven to 350°.
In a large bowl, combine oats, chopped almonds, flax, chia seeds, coconut, 1/2 tsp salt, a pinch of cinnamon and xylitol. Set aside.
In a large cookie sheet with raised sides, combine alond butter, grapeseen oil, and 2 droppers of Stevia ( if you are using granulated, then add it to the dry ingredients), and vanilla extract. Place in the oven for 2 minutes to melt. Remove baking pan from oven and then pour in oat mixture. Stir, flip and fold granola until well combined. Place in the oven and set timer for 7-10 minutes. Again stir, flip and fold granola. Place back in the oven again for 7-10 minutes. Repeat this process until granola begins to darken. Between 35-45 minutes should do it. Don't over cook. Let cool for 20 minutes. Very good with either almond milk or coconut milk.
Serving Size: Makes about 5 cups, enough for 10 servings.
