Louise Harris's Curry Chicken Casserole

Powdered Cream of Chicken Soup Mix, eq of 2 cans 1 lb. Broccoli, frozen1 lb Chicken Breast home-canned, skinless1 cup Hellmans Light Mayonaise1 tsp Lemon Juice1 tbsp Curry powder1/2 cup shredded cheddar cheese2 Tbsp Saltine Crackers, crushed
Make cream of chicken soup mix using broth from chicken for some of the water, set aside to cool.
Steam broccoli in the microwave for 5 minutes.
Set oven to preheat to 300* F.
Arrange broccoli in a 9x13 baking dish.
Arrange chicken on top of broccoli
Mix soup, mayo, lemon juice and curry powder and pour over broccoli and chicken
Sprinkle shredded cheese over top
Sprinkle cracker crumbs over cheese
Bake 30 minutes
Serve over brown or white rice
