Peanut Butter Pancakes

1 large egg2 tbsp butter, melted1 cup milk2 tbsp white vinegar2 tbsp peanut butter, smooth1 tsp vanilla1 cup white flour1 tbsp brown sugar1 tsp baking powder1/2 tsp baking soda2 dash salt
1. Combine milk and vinegar. Set aside to thicken.
2. In a medium bowl, combine egg, peanut butter, butter, thickened milk and vanilla. Mix well.
3. Add flour, sugar, baking powder, baking soda and salt. Mix well. Set aside to stand ten minutes
4. Heat a frying pan on medium low. Use a no-stick spray. Drop batter in 1/4 cup measures into pan. Flip when the bubbles form on top.
Serving Size: Makes 12 pancakes
