High Fiber (great tasting) Black Bean Brownies

Ingredients15 ounce Canned Black Beans, Rinsed And Drained1/2 cup prunes1/2 cup Butter, Plus More For Greasing Pan 1 1/2 cups Semi Sweet Chocolate Chips1 3/4 cup Brown Sugar1 tablespoon Pure Vanilla Extract4 whole Eggs3/4 cups All-Purpose Flour3/4 cups whole wheat flour1/2 cup flax seed1/2 cup + 2 tablespoons Cocoa Powder1 teaspoon Baking Powder1/4 teaspoon Salt 1 cup Chopped Nuts (Optional)1/2 cup mini Semi Sweet Chocolate Chips (Optional)Olive Oil Spray for pan
Cooking Directions
Preheat oven to 350 degrees.
Spray 9"x 13" pan with olive oil spray
In blender, puree black beans and prunes until smooth.
In a microwave-safe bowl, melt butter and 1 1/2 cups chocolate chips on low heat in microwave. Stir with a whisk until butter and chocolate are melted and smooth. Add in black beans.
Stir brown sugar and vanilla into chocolate mixture until smooth.
Add eggs 1 at a time. Mixing thoroughly between additions until all 4 eggs have been added.
In a large bowl combine flours, flax seed, cocoa powder, baking powder and salt. Mix until combined.
Add chocolate mixture into flour mixture and stir until just combined.
Stir in nuts and chocolate chips if desired.
Pour into prepared baking pan and smooth the top of brownies using a spatula.
Bake brownies for 30 - 35 minutes. Allow to cool.
