Cajun Black Bean Patties

Ingredients

1 cup chopped onion1 medium yellow bell pepper, chopped1 small jalepeno pepper, seeded and chopped1.5 cups chopped fresh mushrooms2 cups black beans either from canned or cooked from dry (I used dry)1.5 cups quick oats1 tbsp cajun seasoning (I used Clubhouse brand)2 tsp garlic powder1 tsp Clubhouse roasted garlic and pepper seasoning1 egg plus 1 egg whitesalt and pepper to taste
Chop onion, peppers and onion and saute in nonstick pan sprayed with cooking spray
In a blender or food processor, grind up oats to a powder consistency and remove to a bowl.
Place cooked veggies, egg and egg white into blender and grind up coarsely. Add black beans adn seasonings and coarsely grind. Remove to bowl.
Fold in powdered oats.
You can either shape into patties to bake or fry in lightly oiled pan or grill. You may need to make patties and allow to set or even freeze before cooking. Can be eaten in a bun like a burger or as a low fat, high fiber meatless entree on their own.
