Mint Chip Meringue Cookies

3 large egg whites1/4 tsp.cream of tartar1/8 tsp. salt1/2 cup sugar1 package (10 oz.) Mint baking chips
Preheat oven to 300 degrees F. In large bowl of electric mixer, beat egg whites, cream of tartar, and salt until foamy. Gradually add sugar 1 tablespoon at a time, until stiff peaks form. Fold in baking chips.
Lightly grease baking sheet, or spray with non-stick cooking spray. Drop by rounded teaspoonsful 1 inch apart onto sheet. Bake 27 to 30 minutes until golden brown.
Let cool slightly on sheet, then remove to wire rack to cool completely.
Serving Size: 1 cookie (recipe makes 40 cookies)
