Honey Strawberry Freezer Jam

Ingredients
6 lbs of strawberries, washed and hulled2 cups raw honey2 TBSP lemon juice3 TBSP Kosher gelatin1/3 cup cold filtered water
Directions
Bloom gelatin in water. Smash strawberries in a large pot with a potato smasher. Place on stove over medium heat and add honey. Stir until honey melts. Bring to a light boil and add gelatin then reduce to a simmer for about 10 minutes, stirring occasionally, or until it is the consistency you prefer. Add in lemon juice. (for a smooth jam, blend in a blender or food processor, be careful it's hot!) Pour into clean containers (tupperware, glass jars, anything that has a lid) and put on lids. Place in fridge until cooled then transfer to freezer. When ready to use, keep in fridge. Will last about 1 month once opened.
