Gwyneth's Sweet Potato and Five Spice Muffins

large sweet potatomaple syrupgluten-free flourolive oilvanillabaking powderbaking sodasaltfive spice (1 1/2 Tbs)almond milkxantham gum (1 tsp.)
bake the sweet potato until soft at 400 degrees. cool, then peel and mash. add the almond milk, olive oil, vanilla, and maple syrup. mix the dry ingredients in a separate bowl, then add to the wet and mix. pour into muffin tin. bake at 400 for 20-25 minutes, brushing with maple syrup before the last 5 minutes.
