Introduction

Ingredients

    1 pound shelled edamame (freezer section of most grocery stores)
    1 teaspoon salt
    1 tablespoon chopped garlic
    5 tablespoons olive oil
    1 tablespoon fresh lime juice
    1 teaspoon sugar or sugar substitute equivalent
    1/2 teaspoon fresh ground black pepper

Directions

If edamame beans are still frozen, cover with hot/boiling water to quickly defrost. Remove beans from water. Pour edamame and remaining ingredients in food processor or blender. Puree until smooth. Add a bit more olive oil if you prefer it creamier or a can of green chilies and a spinkle of cumin if you like it spicy. Makes 20 1-oz. servings.

    This was very good and easy to make. I wanted mine a little creamier, so I added 1/2c of light sour cream. We tried it on chips, but I can't wait to try the left overs on a sandwich! - 7/3/11
