Ingredients
1 batch pirogi dough3 cups frozen blueberries1/4 cup sugar1/4 cup corn starch.Water for boiling, if you will be cooking them at this time.
Directions
1) Divide the dough into 36 small balls. Flatten them into round circles by rolling them with a rolling pin. Set them aside.
2) Mix the frozen blueberries with the sugar and cornstarch.
3) Pick up one piece of dough that you have shaped into a round, and spoon a bit of the berry mixture onto the center. Carefully fold the dough, and pinch the sides together, making sure it is sealed.
Place on a greased tray, and repeat with the rest of the dough and filling.
4) After the pirogi are all made, they can be either boiled immediately, or they can be frozen on a tray in the freezer, and then bagged for storage.
If boiling them, boil them for about 5 minutes in a large pot of water. Since they are fresh, that is all the time they will need. Frozen pirogi will take about 7 minutes to cook.
The usual recipe makes about 36 small pirogi. (it depends on the size you want)
